Breakfast Tater Tot Casserole

    Servings: 4

    Ingredients:

    • 1 lb frozen tater tots
    • 4 slices thick-cut bacon (diced)
    • 1 lb ground breakfast sausage (regular or hot)
    • 4 large eggs
    • 1 cup milk
    • ½ tsp salt
    • ¼ tsp black pepper
    • ⅛ tsp garlic powder
    • ⅛ tsp onion powder
    • 1 cup shredded cheddar cheese
    • Seasoned salt or Cajun seasoning (to taste)

    Directions:
    Preheat oven to 350°F. Spray 8×8 baking dish with cooking spray.

    In a large skillet over medium-high heat, cook bacon until browned. Transfer to a paper-towel lined plate. To the same skillet, brown the sausage. Pour into the prepared baking dish.

    In a mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder. Pour over the sausage. Top with crumbled bacon. Top with cheese. Align tater tots over the top.

    Bake for 30 minutes. Remove from oven, sprinkle with seasoned salt or Cajun seasoning. Allow to rest 15 minutes before serving.
