Cajun Chicken Pasta

    Servings: 4

    Ingredients:

    • 1 lb chicken breasts (diced)
    • 1 TBS Cajun seasoning
    • 2 TBS olive oil
    • 2 TBS unsalted butter
    • 3 garlic cloves (minced)
    • 2 cups heavy cream
    • 1 tsp lemon pepper seasoning
    • ½ cup shredded Parmesan (fresh)
    • ½ tsp salt
    • 12-16 oz penne or rotini pasta
    • Toppings (optional):
    • 2 roma tomatoes (seeded & diced)
    • 2 TBS fresh chopped green onions (tops only)
    • ¼ cup fresh grated Parmesan or Asiago cheese

    Directions:
    Prepare pasta as directed to al dente. Drain.

    Sprinkle chicken with Cajun seasoning and rub in. Saute chicken in large skillet with olive oil, turning when necessary.

    In second large skillet, melt 2 TBS butter over medium heat. Saute garlic until fragrant (1-2 minutes). Stir in heavy cream, lemon pepper seasoning and salt. Whisk 1-2 minutes. Add Parmesan, whisking another 1-2 minutes until cheese is melted. If cheese is too thick, stir in additional heavy cream. Stir in pasta, gently toss to combine.

    Spoon onto four plates. Top with spoonful of diced tomatoes, green onion, and grated cheese.

    Serve with garlic bread or Texas toast (optional).
